Fajita Rice and Beans

Fajita Rice and Beans

Gather the following ingredients:

Steak

Red pepper

Green pepper

Olive oil

Fajita seasoning packet

Cheddar cheese

Vigo rice and beans

Medium pot with lid

Large frying pan

Glass pan

Preheat oven to 350 degrees.

Cook the rice and beans according to the package directions.

Cut up the steak into nice bite sized pieces.  Add a tablespoon of olive oil to the pan.  Cook the steak over a medium heat until all sides are browned.  Set aside on a plate.

Cut up the red and green peppers.  Slice the peppers into long slices.  Add a tablespoon of olive oil to the frying pan.  Cook the peppers until you can cut them with a spatula.

Add the stead back into the frying pan.  Cover in fajita seasoning and a some water.  About a forth of a cup.

Cover the bottom of the glass pan with the rice and beans.  Top this with the peppers and steak.  Sprinkle the cheddar cheese over the top.  Cook for 30 minutes.

Goulash

Goulash – simple and tasty

Gather the following ingredients:

1 lb. hamburger
1 tbsp. minced garlic

1 green pepper chopped
1 tbsp. soy sauce
1 can 15 oz. tomato sauce
1 can diced tomatoes
1-2 tsp. Italian herbs

1 cup large elbow macaroni

**optional:  onion, cheddar cheese

Large Pot or Dutch oven

Brown the ground beef in the pot.  Add the garlic to the beef while it cooks.

Chop the green pepper and add it to the pot.  Add the soy sauce, tomato sauce, and diced tomatoes to the pot.  Add Italian herbs for taste.

Add 1 1/2 cups of water.  Simmer , covered, for 20 minutes.  Add macaroni noodles.  Simmer, covered, until macaroni noodles are cooked, about 25 – 30 minutes.  Let this sit before serving.

**Double recipe if needed.  If you like onions add them after you cook the beef and saute them until tender 5 minutes on medium-high heat.  Add cheddar cheese if desired.

Prime Rib

Prime Rib

Gather the following ingredients:

4+ lbs Prime Rib (rib eye) – marble, marble, marble
Steak Seasoning
Au Jus Sauce

Pan large enough for your steak
Pot
Meat thermometer

Preheat the oven to 500 degrees or 475 degrees.

Season all of the sides of the prime rib roast generously and place it into the pan.  Cook for 30 minutes at 500 or 475 degrees or until the smoke alarm goes off (about 28 minutes).

Reduce the heat down to 250 degrees and slow cook the meat for a few hours.  For 5 lbs of meat cook it about one and a half hours.  140 degrees internal temperature for a medium rare prime rib.

When the meat is done pull it out and make the Au Jus sauce.

Serve a thick slice of prime rib swimming in a scoop of Au Jus.

Hungarian Goulash

Crock Pot Hungarian Goulash

Gather the following ingredients:

16 oz frozen cut green beans, thawed
1/2 onion, chopped
1 1/4 lbs beef, cubed
1 can chunky tomato sauce, large or small can
1 can chicken broth
6 oz can of tomato paste
4 teaspoons paprika
cooked egg noodles

Ingredients for Hungarian Beef Goulash

Crock Pot
Medium bowl

Pour the green beans into the Crock Pot.  Chop half an onion and add it.  Cube the beef and add it.  I used a prime pot roast for the beef and cut that into chunks.

Combine the chunky tomato sauce, chicken broth, tomato paste, and paprika in the bowl.  Mix.  Add to Crock Pot.

Put the lid on and cook on low for 6 -8 hours.

Prior to the beef finishing, cook the egg noodles.

Serve the beef mixture over the cooked egg noodles.

Hungarian Goulash dished

Brisket

Brisket – pretty good

Gather the following ingredients:

Brisket
Ketchup
Chili sauce
Onion soup mix

Pan
Aluminum foil

ketchup, chili sauce, brisket, onion soup

Preheat the oven to 275 degrees.

Mix 12 ounces of chili sauce and 12 ounces of ketchup with the onion soup.  I crush the onion soup, but note it is a bad idea to do this with your hand.  Also this sauce will bake onto your pan.  A non-stick or ceramic or something.

Put the brisket into the pan.  Pour the sauce over the top.  Cover with aluminum foil.  Cook for 6 -7 hours.  The meat should be tender enough to pull apart with a fork.

Slice the brisket up and serve.

Western Hamburger, Gruel ;)

Western Hamburger Gruel, Crock-Pot style

*disclaimer, technically this does not actually qualify as gruel

Gather the following ingredients:

1 lb hamburger
1 can tomato sauce (larger can)
1 can kidney beans
1 can corn
chili powder
garlic powder

Crock-Pot
Pan

Optional:

1/2 cup shredded cheddar

Brown and drain the hamburger in the pan.

Add the hamburger to the Crock-Pot.  Pour in the tomato sauce (this is your liquid).

Drain and kidney beans and corn and dump these into the Crock-Pot.

Add chili powder for flavor (a tablespoon or two).  Add 2 pinches of garlic powder.

Add the optional 1/2 cup of shredded cheddar.

Mix well.  Cook on low for 3 hours.  You can cook it up to about 4 hours or so.  You are just trying to heat it through and combine the flavors.  Everything is already cooked.

*If you wanted to make this on the stove you only need to cook it for about and hour.

Beef Stir Fry

Looks Like Christmas

Beef Stir Fry – an Americanized Chinese dish, maybe, but it is fairly easy to make and extremely delicious. My least favorite part is making the sauce, which isn’t difficult.

Gather the following ingredients:

Jasmine rice – 2 cups uncooked

Extra virgin olive oil – 2 tbsp.
Minced garlic – 1 tbsp.
Beef – 1 lb.
Chili pepper

Red pepper
Green pepper
Mushrooms sliced – 8 oz.
Black pepper

soy sauce – 1 tbsp.
cornstarch – 1 tbsp.
oyster sauce – 2 tbsp.
MSG – 1 tsp.

Stir fry pan

Add two plastic cups of Jasmine rice and water into the rice cooker. Set it and forget it.
– you can use other grain rice, but Jasmine is the best for Asian dishes.

Slice the beef into small pieces for stir fry. Cut the peppers into chucks.
– the size of the beef is up to you.
– cut the pepper in half, remove the seeds, cut the halves into thirds and half them again.

Mix the MSG, cornstarch, soy sauce, and oyster sauce in a tall measuring cup. Add half a cup of water and mix completely.

Pour the olive oil into the stir fry pan. Add the garlic, beef, and chili peppers into the pan. Cook on a medium heat for about 3-4 minutes to lightly brown the meat.
– I add enough chili pepper to make it look painful.
– Do not overcook.

Add the peppers and mushrooms. Grind some black pepper for taste. Cook for 2 minutes.

Add the sauce. Cover and cook on low for 3-5 minutes, until the peppers are booked but still slightly crisp. Remove from heat. Allow to cool for 5 minutes before serving over the rice.

Beef Stroganoff

Best beef stroganoff ever.

Gather the following ingredients:

1 to 1 1/2 lbs. of New York strip or other fine cut of beef
Salt
Pepper
Olive oil
2 (8-oz.) packages of sliced fresh mushrooms
1 can of beef broth, about 2 cups
2 tbls. tomato paste
1 tsp. Dijon mustard
1 package (16 oz.) egg noodles
1/2 cup sherry
2 tbls. flour
1 (16 oz.) container sour cream

Cut the beef into 1/2 inch cubes. Sprinkle both sides with salt and pepper.
– the best this has ever turned out I actually used a beef flank recommended by the butcher who had used the same cut the day before to make his own beef stroganoff.

Add 3 tbls. of olive oil to one of the large pots. Heat over a medium-high heat. Sauté the beef and the mushrooms together for 3 – 5 minutes.

– The meat should be seared, not necessarily cooked through.

Stir in the broth, tomato paste, and mustard.

Reduce the heat to low and cover. Cook for 1 hour.

About half an hour prior to the beef mixture being finished start to boil the water for the egg noodles. – Try to time the noodles to finish shortly after the meat.

Stir the flour and sherry into the beef mixture, cook, stir constantly until it thickens.
– Mine never thickens. I just cook it a few minutes and move on.

Add the sour cream. Stir. Turn off the heat. Add the noodles. Stir. Serve.

Linda’s Chili

So I created this chili recipe from what I had in my pantry one day and it turned out so good I keep making it this same way, or at least with the same ingredients.

Gather the following ingredients:

2 lbs. ground beef
4 tbsp. minced garlic
12 (1/2 tsp.) chili powder
2 tsp. salt
2 tsp. dried oregano
2 cans stewed tomatoes
2 cans Rotel diced tomatoes lime juice & cilantro
2 (8 oz.) can tomato sauce

2 can light kidney beans with liquid

Very large pot with lid

Option toppings:

Red pepper
Cheddar cheese
Fritos corn chips
Corn bread
Cinnamon rolls

Chili ingredients

Brown the hamburger with the garlic over a medium heat.

Sprinkle the chili powder, salt, and oregano over the meat and stir. Then stir in the tomatoes and the tomato sauce. Try to break up the larger tomatoes. Heat all of this to boiling and then reduce the heat to simmer, cover the pot. Cook for 1 hour stirring occasionally.
– why 12 1/2 tsp. instead of 6 tsp.? Because the 1/2 tsp. fits into the jar.
– the salt does not need to be exact. Sprinkle some in for flavor.
– if you do not have the Rotel tomatoes 2 more cans of the stewed tomatoes will work, but it won’t have the same bite.

Chili mix

After 1 hour add the beans. Simmer uncovered for an additional 20 minutes. Stir occasionally.
– If you added the beans with the other ingredients it isn’t going to ruin them, but it is better to add them later.

Toppings for your bowl:

Add red pepper if you want a little more kick.
Add cheddar cheese if you like.

Chili is good over or under Fritos or corn bread.

Use the cinnamon rolls to soak up the juices and when the roll is gone then add the cheddar cheese.

Curried Beef Stew

Ingredients:

2 pounds of beef stew meat
6 medium white potatoes
2 cans tomato paste
1 yellow pepper
1 red pepper
1 green pepper
1 1/2 tablespoons curry powder
Black pepper

Crock Pot

Peel the potatoes and cut them into bite sized pieces.

Chop up the 3 peppers:  yellow, red, and green.

Put everything into the Crock Pot and cook on low at least 8 hours.

*Curries vary greatly.  It is a blend of cinnamon, cardamom, cloves, cumin, coriander, turmeric, and ground red or black pepper.  Try different brands until you find one you like.
