Ham and Bean Soup – Instant Pot

Gather the following ingredients:

Cubed ham

15 bean mix – cajun is best even if you don’t use the seasoning

7-8 cups of water

Add all of the ingredients to the pot – you do not need the rack

Put on lid and set venting to seal

Hit manual and set time to 1hr 45 minutes – walk away

When the time has ended the instant pot will count up.

When ready to eat set the top to vent, do not put hand over steam. Once fully vented you can open the lid.

Taste a bean to make sure it is done. If not fully cooked cook for another 15 minutes. It should look more like soup then water and beans when it is ready.

Ham and Potato Gratin

Ham and Potato Gratin – very good

Gather the following ingredients:

2 lbs. potatoes
1 lb. ham
1/2 lb. Gruyere cheese
fresh parsley
1 1/2 cup half-and-half
Salt and pepper

large glass pan

Preheat over to 325 degrees.

Cut the potatoes into slices.  Cube the ham.  Grate or chop up cheese into small pieces that will melt.  Chop the parsley.  Mix everything in  the glass pan.

Pour 1 1/2 cups over the top.  Season with salt and pepper.

Cover with aluminum foil and bake for 30 minutes.  Uncover and cook an additional 30 minutes.

Ham and Potato Soup

There are few soups that I love as much as ham and potato soup. It is a great alternative to ham and bean soup for that leftover holiday ham.

Gather the following ingredients:

8 oz. ham
2 1/2 lbs. potatoes
2 cans chicken broth
1 tbls. Dijon mustard

1 1/2 cups milk
1 can cream of celery

1/4 tsp. garlic powder
salt

Dutch oven or the biggest pot you can find

Cut the ham into cubes. Dice the potatoes. Add ham, potatoes, Dijon mustard, and chicken broth to the Dutch oven. Boil until the potatoes until they are tender, about 30 minutes once it starts to boil.

Combine the milk and cream of celery, stir into the pan.

Season with garlic powder and salt. Heat the soup through – do not boil.

Cheesy Hash Browns with Ham

A side dish or a main course, cheesy hash browns with ham.

Gather the following ingredients:

1 (32 ounce) package of frozen has brown potatoes
A cooked ham steak or cubed ham or frozen leftovers
2 cans condensed cream of potato soup
1 (16 oz.) container of sour cream
2 cups shredded sharp Cheddar Chees
Grated Parmesan Cheese

1 large glass pan or 2 smaller glass pans
Huge bowl

Preheat oven to 375 degrees.

Break the frozen hash browns by dropping it onto cement or a hard floor. Do not body slam the package. It doesn’t end well.

Slice the ham into small cubes.

In an extreme large bowl mix the cream of potato soup, sour cream, cheddar cheese, and the ham. Mix in the frozen has browns.

Transfer the mixture into the glass pan or pans.

Top with the grated Parmesan cheese.
– Do not use shredded parmesan cheese for this. It will burn.

Bake for a full hour.

Chicken and Ham with Biscuits

Ingredients:

2 cans cream of mushroom soup
2 cups of diced ham (cubed ham works, ham steak cubed, or leftover ham)
2 cups of diced chicken (uncooked)
1 package of frozen peas (about 12 ounces or less)
1 package of frozen corn (about 8 ounces or less)
1/2 cup of chopped celery
1/4 teaspoon dried marjoram
1/4 teaspoon dried thyme
2 tablespoons cornstarch
2 tablespoons water
1 to 2 cans refrigerated buttermilk biscuits

baking pan (pizza pan works)

Mix everything but the cornstarch and water in the Crock Pot.  Turn carefully so you do not crush the peas.  Cook on low for 4 to 5 hours.

Whisk the cornstarch and water together until it is smooth and then stir that into the Crock Pot.  Cook an additional 10 to 15 minutes.

Cook the biscuits per the package directions while the cornstarch is thickening the mixture.

Serve the chicken and ham mixture over the biscuits.
